Ingredients

For the croquettes

  • 4 sausages of the flavor you prefer
  • ¼ cup of grated carrot (60 ml)
  • ¼ cup of grated pumpkin
  • 1 cup of potato cooked and cut into cubes (240 ml)
  • ¼ cup of corn kernels (40 g)
  • 1 teaspoon of salt (5 g)
  • 2 eggs
  • 1 teaspoon of pepper (5 g)
  • 1 teaspoon of garlic powder (5 g)

For the breading

  • 2 cups of rolled oats (240 g)
  • 1 tablespoon of wheat flour (10 g)
  • 2 eggs beaten

Preparation

  1. Cut the potatoes into cubes and boil them in hot water until slightly soft. When they are ready drain the water.
  2. Preheat the oven to 200 ºC ..
  3. In a bowl or bowl, deposit the potatoes in cubes and proceed to mash them. The more crushed they are, the better.
  4. When the potatoes are well mashed and you have a real puree, proceed to add the sausages, carrot, pumpkin, corn kernels, egg, salt, pepper and garlic powder. Mix very well until a smooth paste is formed. Reserve for later.
  5. Once the mixture has settled for a while, proceed to shape the croquettes. With your hands, form a ball of approximately 30 g.
  6. Cover these croquettes with wheat flour. Then dip them in beaten egg and cover them with the oatmeal flakes.
  7. When you have all your balls, place them in a baking container covered with parchment paper. Spread oil over all the croquettes.
  8. Bake the croquettes for 20 minutes or until crisp.
