Tres Leches Cake

Surely you have already tried the exquisite tres leches cake and think that it is a difficult dessert to make.

However, this dessert stands out for combining flavors and textures. It is a large sponge cake that is moistened with a cream and decorated when finished.

The secret of this cake is in three things:  a spongy vanilla sponge cake, a tres leches cream where no skim on ingredients and a firm sigh.

Ingredients to make the tres leches cake

Biscuit:

  • Six eggs
  • Two cups of sugar.
  • Three cups of pastry flour.
  • 1 spoon of vanilla.

Cream:

  • A can of condensed milk.
  • A jar of heavy cream.
  • ¼ of a glass of rum.
  • A cup of evaporated milk.

Sigh:

  • Four egg whites.
  • Sugar, preferably powdered.
  • Cinnamon.

Preparation of the tres leches cake

  • The first thing we are going to do is turn on the oven at 180º Celsius.
  • We take a large bowl or container and add the egg yolks. With an electric mixer, mix very well with the three cups of sugar until it dissolves. It is important to mix both ingredients well.
  • In another bowl,  add the remaining egg whites and beat until stiff.
  • We join both mixtures with the help of a trowel.
  • Sift the three cups of flour and slowly incorporate with enveloping movements to the mixture, without beating too much. It is about joining the flour with the mixture.
  • Finally, we add the vanilla.

    The montage

    • We take a cake baking tray that is 30 centimeters in diameter, prepare it with spray oil and add the mixture.
    • We take to the oven for 45 minutes or until when inserting a toothpick it comes out dry.
    • We remove from the heat and let it rest. The cake should not be hot when you bathe it with the tres leches cream.
    • For the cream,  we mix all the ingredients very well and keep.
    • We remove the cake from the pan and place it on a tray. Cut into two pieces, horizontally, in this way it will be easier for the cake to absorb the cream.
    • We bathe both pieces of cake with the cream generously, at this point it is important that all the cake is impregnated with the liquid.
    • We join both pieces of cake again and if we consider it necessary, we make small holes with a fork on the crust of the cake and bathe again with the cream that has remained.
    • We proceed to decorate with the sigh, while we beat the whites until stiff and then we gradually incorporate the powdered sugar until it has a good consistency. We can also add a sugar syrup to the snowy yolks and thus cook the meringue a little. In both ways, a soft and firm sigh will come out that we can work with the pastry bag.
    • We make peaks on the cake and decorate with cinnamon powder.

    Tres leches cake is a fairly sweet dessert, therefore, if you want to avoid high sugar consumption, you can reduce the amount of this ingredient in the cake, so it will not be so cloying and you can eat more than one bite.
