Sirloin With Mushroom And Potato Sauce

Sirloin with mushroom sauce is a delicious recipe that involves a select piece of meat with an exquisite and versatile sauce, and if it is accompanied with baked potatoes it will be a luxurious dish.

Ingredients

  • 2 pork tenderloins
  • 1 onion
  • Salt
  • Pepper
  • Olive oil

For the sauce

  • 100 g of mushrooms
  • 1 large ripe tomato
  • 3 carrots
  • 1 spring onion
  • 1 bay leaf
  • Sirloin trimmings (optional)
  • Salt
  • 5g sugar
  • 10 g cornstarch
  • 15 ml of warm milk

For the potatoes

  • 1 kg of clean medium potatoes
  • 15 g of cumin
  • Salt and ground pepper
  • Olive oil

    Preparation

    1. Cover the inside of a baking dish with aluminum foil, leaving the shiny side up.
    2. Preheat the oven to 200 ° C.
    3. Wash the potatoes very well and cut them in half or thick slices.
    4. Place them in the pan and sprinkle with cumin, salt, and ground pepper. Finish by adding a dash of olive oil.
    5. Bake the potatoes for 45 minutes or until golden brown  and tender when pierced with a fork.
    6. While the potatoes are ready, proceed to clean the meat well, cutting the fat with a knife and leaving only the central part.
    7. Reserve the sirloin cuts, they will serve to flavor the sauce.
    8. Julienne the onion.
    9. Take a baking tray and add a splash of olive oil, spread it over the entire surface and place the cut onions.
    10. Salt and pepper the sirloins and place them in the center of the tray.
    11. Add an extra splash of olive oil.
    12. Put the tray in the oven and let the meat brown for 15 minutes, then turn it over so that it browns on all sides evenly. The total cooking time should be approximately 30 minutes.

    Preparation of the sauce

    1. While the meat is being cooked, proceed to put a medium deep pot to heat a tablespoon of olive oil over medium heat.
    2. Cut the onion finely.
    3. When the oil is hot, add the onion and the cuts of the sirloin that you had reserved, stirring frequently so that the ingredients are browned all over.
    4. Cut the tomato into small cubes and place them in the pot when the meat has browned.
    5. Remove the skin from the carrot, cut it into cubes and add it to the previous ingredients.
    6. Finally cut the mushrooms into slices and add them to the mixture along with the bay leaf.
    7. Season with the salt and sugar.
    8. Stir well and pour half a cup of water into the mixture.
    9. Let the sauce cook over medium heat for 20 minutes, skimming if necessary.
    10. After this time, blend the mixture until it is like a liquid paste.
    11. Dissolve the cornstarch in the warm milk.
    12. Put the smoothie back in the pot and stir it together with the cornstarch, stirring  until you get a thick and creamy sauce.

    The final touch of sirloin with mushroom sauce

    1. Remove the sirloins and potatoes from the oven.
    2. Serve by putting a few potatoes on each plate, the sirloin cut into fillets and on top of it, pour a little of the sauce.

    • The recommended ingredients for this sirloin with mushroom sauce are enough for four people. Remember that if you have more guests, you must adjust the portions.
    • We suggest starting with potatoes because they require the most exposure in the oven.
    • If you prefer, you can replace the olive oil that you use to put on the sirloins and, with the help of a kitchen brush, paint them with melted butter.
    • It does not matter that the potatoes have not finished cooking when you introduce the sirloin, since both ingredients are cooked at the same temperature. Of course, you must be very attentive to the different cooking times.
    • You can replace the water in the sauce with meat broth.
