Three Chocolate Mousse Cake Recipe

You will look like a pastry expert when you arrive at the table with such a work of art. If your family loves sweets, and especially chocolate, this recipe is special for you.

Ingredients

For the cake

  • 150 g of dark chocolate
  • 150 g milk chocolate
  • 750 ml whipping cream
  • 150 g white chocolate

For the base

  • 1 package of digestive biscuits
  • 80g butter

  • 23 cm diameter baking tray
  • Baking paper

Preparation

  • Before you begin,  remove the butter from the fridge to bring it to room temperature.
  • Then, chop the cookies and crush them with a food processor. Next,  mix with the butter using your hands until you have a homogeneous dough.
  • Next, line a baking tray with special paper and then pour the dough making sure that it is well even. Then put it in the fridge for at least half an hour.
  • Meanwhile,  heat a third of the cream in a saucepan until it boils.
  • Then, add the previously chopped dark chocolate and mix well so that everything is integrated.
  • Then pour it into a bowl and let it come to room temperature.
  • Repeat these steps separately first for the milk chocolate and then for the white chocolate. Then put them all in the fridge for 1 hour.
  • Then, remove and beat each one with electric rods. Next, add the first chocolate to the base of the mousse cake and then put it in the fridge for 15 minutes.
  • Do the same until completing it with the other 2 chocolates. Lastly, you have to let it cool for at least 6 hours before serving your triple chocolate mousse cake.

Another three chocolate mousse cake idea

It is something similar to the previous one, but it differs in that it has a crème anglaise in each of the chocolate layers. You will not be able to stop enjoying it.

Ingredients

For the base

  • 150 g of biscuits type digestive or maría
  • 70g butter

For the English “mother” cream

  • 500 g whipping cream
  • Vanilla essence (required amount)
  • 70g sugar
  • 4 egg yolks

For the dark chocolate layer

  • 1/3 part of the crème anglaise
  • 60 g of dark chocolate
  • 1 sheet of gelatin
  • 150 g of cream

For the milk chocolate layer

  • 1/3 part of the crème anglaise
  • 60 g milk chocolate
  • 1 sheet of gelatin
  • 150 g of cream

For the white chocolate layer

  • 1/3 part of the crème anglaise
  • 60 g white chocolate
  • 1 sheet of gelatin
  • 150 g of cream

Utensils

  • Kitchen robot or mortar
  • Container
  • 20 cm diameter mold, at least
  • Saucepan

  • Electric rods
  • Spoon or spatula

Preparation

First of all, we are going to prepare the English cream that will serve you for the chocolate layers:

  • First, boil the cream.
  • Then, in a bowl, beat the yolks with the sugar.
  • Then add the hot cream and continue beating.
  • Lastly, add the vanilla extract.
  • Finally, divide into 3 equal parts and reserve.

Let’s go for the preparation of the cake itself. Take note:

  • First, crush the cookies in a food processor or mortar  and then mix with the semi-melted butter. You will have a somewhat sandy mass. Then, put it in the bottom of the mold you are going to use (better if it is circular).
  • Then press well to make it compact. Then, put in the fridge while you continue with the fillings.
  • Next, hydrate the gelatin sheets with cold water for 5 minutes.
  • Then melt the chocolates separately. It can be in the microwave or in a bain-marie.
  • Next, put each sheet of gelatin in the bowls with crème anglaise. Then, stir well and then pour the chocolate in each one. Finally, pour in the semi-whipped cream.
  • Finally, remove the base from the fridge and spread the first of the chocolate layers. Chill for about 15 minutes before adding the second coat. Then do the same with the third.
  • When finished, leave 3 more hours for everything to solidify.

  • Tips: We recommend putting the layer of white chocolate on top to create contrast. Although you can also put them in the order you prefer.
